Start by peeling the cucumber and removing the seeds. Then squeeze the excess moisture out of the grated cucumber.
Peel the garlic cloves, mince them finely, and mix them with salt using your hands.
In a bowl, combine yogurt, sour cream, cucumber, garlic, lemon juice, vinegar, salt, and pepper. Stir until well mixed.
Stir in 1 or 2 tbsp Greek yogurt and mix well to distribute the garlic evenly.
Add the remaining yogurt, grated cucumbers, olive oil, and vinegar. Stir, cover, and place in a refrigerator.
When ready to serve drizzle a bit of olive oil over top.
