1. Chop the japaleno and set it aside.
2. Cook the bacon slices, then chop it and set it aside.
3. In a large bowl, mix 1/4 tsp cayenne pepper, 1 1/4 cup (325 g) almond flour, 1 packet stevia, 1/4 tsp baking soda, and one pinch of salt until combined.
4. In another bowl, mix 4 eggs, 1/4 cup (59 ml) almond milk, 2 Tbs coconut oil, and 1 tsp vanilla.
5. Add the wet ingredients to the dry and gently stir it.
6. Add 1/4 cup (85 g) of chopped japaleno to the mixed ingredients, and preheat your waffle maker.
7. Cook according to your waffle maker’s instructions.
8. Serve it with your favorite syrup.
