Japaleno & "Bacon" Vegetarian Waffles

The collision of sweet, savoury, and spicy. This recipe with spicy jalapenos and smoky and crunchy bacon, without the bacon of course, is the best if you want to eat something delicious but at the same time easy and fast.

Ingredients
  

  • 1/4 cup Japaleno
  • 1/4 tsp Cayenne Pepper
  • 3 slices Vegan Bacon (e.g. sweet earth benevolent bacon)
  • 4 Eggs
  • 1/4 cup Almond Milk
  • 1 1/4 cup Almond Flour
  • 2 Tbsp Coconut Oil
  • 1 tsp Vanille
  • 1 packet Stevia
  • 1 tsp Baking Soda
  • pinch Salt

Instructions
 

  • 1. Chop the japaleno and set it aside.
  • 2. Cook the bacon slices, then chop it and set it aside.
  • 3. In a large bowl, mix 1/4 tsp cayenne pepper, 1 1/4 cup (325 g) almond flour, 1 packet stevia, 1/4 tsp baking soda, and one pinch of salt until combined.
  • 4. In another bowl, mix 4 eggs, 1/4 cup (59 ml) almond milk, 2 Tbs coconut oil, and 1 tsp vanilla.
  • 5. Add the wet ingredients to the dry and gently stir it.
  • 6. Add 1/4 cup (85 g) of chopped japaleno to the mixed ingredients, and preheat your waffle maker.
  • 7. Cook according to your waffle maker’s instructions.
  • 8. Serve it with your favorite syrup.

Notes

Chef's Tips:
  • If you’re a spicy lover, don’t remove the japaleno seeds, make sure to keep them while you chop the japalenos, that gives the spicy flavor.
  • On the other side If you don’t want it to be too spicy, cut the japaleno down by half.
  • Chop the japaleno with gloves so you don't burn yourself.
  • And cook the bacon first to make sure it’s crispy an crunchy.
